初秋时节,风清气爽。走进位于望城区的茶亭花海游客中心一楼,现磨咖啡吧台香气氤氲,隔壁的窑炉正冒着热气。几位专程从长沙城区驱车赶来的游客,边喝着咖啡边耐心等待即将出炉的现烤面包。
透过大块的落地窗看去,绿油油的稻田随风舞动,弯腰的瞬间偶尔会露出刚长出来的稻穗,蜿蜒游步道上三两游客在拍照打卡。待到来年阳春三月,这片沃野还会翻涌成一望无际的金色油菜花海。稻田有岁稔,花海有花期,端出了咖啡与面包的茶亭,更让人有了四季可来的理由。
窑烤面包把城里胃留在乡村
早上7时多,茶小亭窑烤面包工坊已经热闹起来,主理人吴霞和面包师们系上围裙,生火、预热、备料,开始了一天的忙碌。

与电烤箱的精准恒温不同,窑烤是一种起源于几百年前欧洲的传统烘焙工艺,主要依靠果木柴火燃烧的余温进行烘烤。10时许,第一炉面包出炉了,仅仅因为慢端出来几十秒,第二盘的面包色泽明显更为金黄。“我们的面包采用进口麦粉,零添加,经长时间低温发酵和果木窑烤,每一次出来的面包都是独一无二的。”吴霞边说边切,让大家品尝。

“我家孙儿特别爱吃她的面包,每周我都会买。”专程带朋友从长沙赶来游玩的刘阿姨要了一份现吃,又打包了几个。记者好奇地取一小块嚼了起来,浓郁奶香和丰富的口感充斥唇舌间,别有一番风味。

“目前,我们建了两个窑炉,一个黑窑,一个白窑。可满足日常和节假日高峰期不同时段的面包供应。”吴霞说,这里设置了DIY环节,游客可以在这里搓面团、做面包,让乡村之旅多一份难忘的互动温情。开业以来,这里已经接待了上千人次的研学游,不少研学机构成了回头客。
而今,坐在200平方米的咖啡馆内,面向稻田美景,边喝咖啡边品窑烤面包,成为不少游客来茶亭的必选动作。
能人返乡创业“咖”味渐浓
难以想象,一年多前吴霞还是个外行人。她是茶亭镇谭家园村村民,过去和丈夫在城里从事建材生意,“这几年家乡变化很大,游客也多了,但大家看了惜字塔、油菜花后就走了,当时我就想要有个地方,让游客停下来就好了。”
去年上半年,茶亭镇斥资上千万元打造的游客服务中心建成,向家乡贤能们广发邀请函,吴霞动了心:我想给村里带点不一样的东西来,经过前期的调研和反复权衡,吴霞决定引进咖啡和窑烤,把这一多见于城市的商业品类引入乡村。
就这样,双方一拍即合。去年8月,茶小亭咖啡馆对外营业;去年10月,茶小亭窑烤面包工坊如期运营。
“总共投资了60万元,今年花海季期间已经完全收回了成本。”吴霞很满足,“原以为花海季后,生意就会冷清,没想到门店营业额稳步攀升,日均销售面包百余个,高峰期一天卖出上千个。”
如今,来喝咖啡、做面包的客人络绎不绝,门店营业额稳步攀升。吴霞还通过小红书、朋友圈积累了一批稳定的客群,覆盖长株潭、岳阳等多地,“因为有不少客户回城后也要吃我们的面包,现在每周我都会在朋友圈发布送货线路图,拼单达到三百元就送货。”
新业态与乡村发展同频共振
“村咖、窑烤面包,这些都是大家表达对乡村向往的一种形式。”在吴霞看来,窑烤面包售卖的是松弛感。“城市里的咖啡,人们买了就冲进工位,而村里的咖啡是用来放空的,和要慢慢等待面团发酵、柴火升温、香气四溢的窑烤面包有相似的灵魂。”她说。
茶小亭咖啡馆和面包坊的出圈,她坦言离不开茶亭镇政府的机制创新。该项目采用“镇主导+公司化运营”模式,通过营业额分成替代固定租金,有效降低运营成本,增强景区自我造血能力。据介绍,项目预计可带动就业150人以上,年引流游客超5万人次。
茶亭镇日新月异的发展还在不断为茶小亭咖啡馆注入动能。今年以来,茶亭花海聚焦3A级景区展开3.0版提档升级,新建生态停车场、木栈道、特色景墙;石渚河二期综合整治清淤护岸、新增游步道景观廊架;游客中心文创布展、惜字学院室内装修竣工;游客中心东侧综合配套建筑、两处新增旅游公厕完成立项筹备……一批新建、续建、规划项目,正推动花海从季节性赏花热点转向四季可游、业态丰富的全域文旅示范区。
从建材职场人到小院主理人,吴霞在茶亭找到了属于自己的生活节奏。清风拂过小院,窑火余温尚存。这座藏在乡野深处的小店,仍在继续书写关于热爱与理想的温暖故事,吴霞打算继续引进河田鸡项目,让游客在茶亭品尝到又一种新鲜美味。
