在贵阳,你很容易邂逅一家“冠军咖啡”店,在抖音、小红书等社交媒体上,“贵阳咖啡”相关浏览量突破3亿次。贵阳咖啡的红火,是由这个城市的3000多家咖啡店共同绘就的,而在这里,藏着一群人的热爱与坚守,青春与奋斗。

称重、下豆、测量失水率和豆粉的色值……这是“雪咖啡”咖啡店主理人李拓键每天早上的日常操作,他需要为店里6种咖啡豆定制不同的烘焙方式,“像非洲豆,它们本身土壤的花香味和水果味会比较多,所以我们会把它烘焙得比较浅,保留它的酸。而亚洲和美洲豆本身纯度高、甜度高,我们往中度烘焙去走,增加它的甜度。”

2015年,李拓键在贵阳市花溪区创办了“雪咖啡”品牌,目前一共有5家分店,很多顾客都是他家多年的熟客。
贵阳市民谢怡雯在“雪咖啡”太平路分店喝了两三年咖啡:“基本上我每天都过来,户外的感觉会更好一点,我喜欢他们的‘橘子海’这款咖啡。”

2011年,李拓键在韩国留学,并考上了咖啡师中级证。“刚回来的时候,贵阳的咖啡店是给人打牌和玩桌游的地方,所以我想自己弄一个纯做产品的咖啡店。”

好咖啡需要咖啡师的坚守,从选豆、烘焙再到研磨和萃取,每一步都是做出好咖啡的关键。涂海兰既是咖啡师,也是店里的合伙人之一,钻研咖啡风味和产品的情绪价值是她的一大爱好。
涂海兰说:“只要一有假期,我就会去全国一些比较感兴趣的咖啡店去打卡,这一面墙的200多个徽章都是通过集邮获得的,这是我每年去上海都要打卡的一家创意特调店,它会把不同食材混在一起,创造出1+1>2的效果,很多店的设计理念、风格、产品技术的本身都不错,要学习人家好的地方。”

在旺季,“雪咖啡”一个店每天能卖出300多杯咖啡,贵州旅游业的火热也给小巷里的咖啡店带来了客源和知名度。接下来,“雪咖啡”计划在厦门开设第一家省外分店。

李拓键说:“我希望让更多人去接触咖啡,喜欢咖啡。我们现在的小程序有7万会员,这对我们来说,是一件很有成就的事,这是这么多年来咖啡主理人们一起共同努力的结果。”
除了“雪咖啡”这样开了10多年的老店,贵阳还有像“胡豆咖啡”这样的新店,这个店的十人团队平均年龄25岁。

“胡豆咖啡”的主理人梁嘉宸每天都很忙碌,不仅要打理店里的生意,还要准备今年七月份世界咖啡师大赛中国区总决赛的比赛。

梁嘉宸说,自己参加的比赛要在15分钟内做12杯饮品,一边做一边去表达作为咖啡师的观点,需要非常流畅的展演,这就需要大量的练习去支撑,“像去年我们大概做了500多遍,前年练习了大概有700遍左右。”

今年四月,梁嘉宸获得了2026世界咖啡师大赛中国区华东分赛区冠军。冠军并非偶然,2023年,他拿下该赛事的全国第五,2025年斩获全国第三,为了迎接今年的全国总决赛,他每天大部分的时间都在备战。
梁嘉宸说:“我们是第四次进到总决赛了,今年压力反倒没有那么大。我们还是会努力参赛,但是结果可能对于我们来讲并不重要,心态上有变化之后,这让我们参赛过程也更轻松一些。今年的心思不再去想怎么赢,而是想怎么把以往没有做好的环节再优化一下。”

如今,贵阳平均每2000人就拥有一家咖啡店,密度超过上海,成为全国咖啡店密度最高的城市之一。3000多家咖啡店中,除连锁品牌之外,贵阳本土咖啡品牌有1000多家。在“咖啡之城”找到属于自己的差异化发展之路也是很多咖啡主理人的共识。

“胡豆咖啡”主理人梁嘉宸说:“在整个咖啡产业上,贵阳更多的是做烘焙和咖啡馆,贵州旅游这两年飞速发展,对我们店和同行来说,都是非常有帮助的。我们下半年的重心会放在培训讲师这个部分,希望去给贵阳更多喜爱咖啡的人做一些分享。”
一杯咖啡,满城飘香。当松弛的生活哲学遇上凉爽的山地气候,贵阳便生长出了众多咖啡馆。它们不仅是味蕾的慰藉,更是这座城市浪漫与闲适气质的最佳注脚。

He needs to customize different roasting methods for the six types of coffee beans in the shop. Asian and American beans have high purity and sweetness, so we go for moderate roasting to increase their sweetness
In 2015, Li Tuojian founded the "Snow Coffee" brand in Huaxi District, Guiyang City. Currently, there are a total of 5 branches, and many customers are long-time regulars of his family.
Guiyang resident Xie Yiwen has been drinking coffee at the "Snow Coffee" Taiping Road branch for two or three years: "Basically, I come here every day, and the outdoor feeling is a bit better. I like their 'Orange Sea' coffee
In 2011, Li Tuojian studied abroad in South Korea and obtained the Intermediate Certificate of Barista. When I first came back, the coffee shops in Guiyang were places for people to play cards and board games, so I wanted to open my own coffee shop that only produces products
Good coffee requires the perseverance of a barista, from selecting beans, roasting to grinding and extraction, every step is the key to making good coffee. Tu Hailan is not only a barista, but also one of the partners in the store. Studying the flavor of coffee and the emotional value of products is her major hobby.
Tu Hailan said, "Whenever there is a holiday, I will go to some coffee shops across the country that I am interested in to clock in. The more than 200 badges on this wall are all obtained through stamp collecting. This is a creative specialty store that I clock in at every year when I go to Shanghai. It mixes different ingredients together to create a 1+1>2 effect. Many stores have good design concepts, styles, and product technologies, so we need to learn from their good places
During peak season, "Snow Coffee" can sell over 300 cups of coffee per day, and the booming tourism industry in Guizhou has also brought customers and popularity to the coffee shops in the alleys. Next, "Snow Coffee" plans to open its first out of province branch in Xiamen.
Li Tuojian said, "I hope to encourage more people to come into contact with coffee and enjoy it. Our current mini program has 70000 members, which is a great achievement for us. This is the result of the joint efforts of coffee managers over the years
In addition to old stores like "Snow Coffee" that have been open for more than 10 years, there are also new stores like "Hu Dou Coffee" in Guiyang, with a team of ten people with an average age of 25.
The manager of "Hu Dou Coffee", Liang Jiachen, is very busy every day, not only managing the business of the store, but also preparing for the China finals of the World Barista Competition in July this year.
Liang Jiachen said that the competition he participated in required him to make 12 drinks within 15 minutes, expressing his views as a barista while doing it. It required a very smooth performance, which required a lot of practice to support it. "Last year, we did it about 500 times, and the year before last, we practiced about 700 times," he said
In April of this year, Liang Jiachen won the championship of the East China division of the 2026 World Barista Competition. The championship is not accidental. In 2023, he won the national fifth place in the competition, and in 2025, he won the national third place. In order to prepare for this year's national finals, he spends most of his time preparing for it.
Liang Jiachen said, "This is our fourth time reaching the finals, and the pressure this year is not so great. We will still work hard to participate, but the results may not be important to us. After a change in mentality, the process of participating in the competition will also be easier. This year's focus is no longer on how to win, but on how to optimize the aspects that were not done well in the past
Nowadays, Guiyang has an average of one coffee shop per 2000 people, surpassing Shanghai in density and becoming one of the cities with the highest coffee shop density in the country. Among over 3000 coffee shops, in addition to chain brands, there are more than 1000 local coffee brands in Guiyang. It is also a consensus among many coffee managers to find their own differentiated development path in the "Coffee City".
Liang Jiachen, the manager of "Hudou Coffee," said, "In the entire coffee industry, Guiyang is more focused on baking and coffee shops. Guizhou tourism has developed rapidly in the past two years, which is very helpful for our store and peers. Our focus in the second half of the year will be on training instructors, hoping to share with more coffee lovers in Guiyang
A cup of coffee fills the city with fragrance. When the relaxed philosophy of life meets the cool mountainous climate, Guiyang has grown numerous cafes. They are not only a comfort to the taste buds, but also the best footnote to the romantic and leisurely temperament of this city.
